La sostenibilitat com a factor determinant en les decisions i preferències dels consumidors del sector de la restauració a Barcelona i la seva àrea metropolitana
Resum
L’objectiu principal d’aquest estudi és fer una anàlisi de la sostenibilitat com a factor determinant de decisions i preferències dels consumidors en restauració. S’ha aplicat metodologia d’anàlisi quantitativa als resultats d’una enquesta realitzada a consumidors de serveis de restauració situats a Barcelona i la seva àrea metropolitana. Els resultats revelen una gran preferència pels productes locals i els de temporada. A més, s’estima que l’ús de mètodes sostenibles genera més confiança en els consumidors i millora la reputació dels establiments. Es conclou que la sostenibilitat és un factor cada cop més important en les decisions de consum dels clients de la restauració, encara que es produeixen diferències quant a les seves preferències en funció de l’edat, el gènere i el nivell d’estudis. En qualsevol cas, els propietaris i els gestors de restaurants haurien de considerar aquest factor en dissenyar la seva oferta al públic.
